1. Heat oven to 180 degrees C
  2. Brush beef with oil and season with salt and pepper
  3. Sear in a large non-stick frying pan for approx. 12 minutes until brown on all sides
  4. Place in roasting pan and roast for 10 minutes (rare) or until cooked to your preference

Caper Dressing:

  1. Heat olive oil in pan over medium heat.  Add shallots  and capers and cook for 3-4 minutes. Add vinegar and cool for another minute & reduced slightly
